Instructions:
In a large pot, brown the sausage and set aside.
In the same pot, sauté the onion, carrots, and celery until tender.
Add the lentils, chicken stock, water, tomatoes, oregano, and cooked sausage. Bring to a boil.
Reduce heat and simmer until lentils are tender.
