Sure to be the talking point of any dinner party, this grilled fish with sage and romesco sauce is perfect for a house full of friends and family. Ingredients
4 fillets of flathead or other firm fish of your choice 1⁄3 cup plain flour, sifted
Sea salt
Olive oil
20 g unsalted butter
1⁄4 cup fresh sage leaves
Plain flour, for dusting fish
1 quantity of Romesco sauce
Method
Step One: Preheat the grill or oven to 180°C. Place flour and a good pinch of sea salt on a plate and use to lightly dust the fish.
Step Two: Place an oven-proof frying pan over medium heat. Add a splash of oil along with the butter.
Step Three: When the butter has only just melted, add the fish and cook until golden on both sides before placing it under the grill or in the oven for 4 minutes or until cooked through. Halfway through this cooking time, add the whole sage leaves to the fish dish and allow them to sizzle in the pan.
Step Four: While the fish is under the grill, gently warm the romesco sauce.
Step Five: Serve the fish topped with warm romesco sauce and burnt sage leaves.
